[Materials] (For 2 people)

Bone-in thigh meat (approx. 200g)  Two  
1 potato
1/2 apple
1 clove of garlic
Salt (0.9-1% of chicken weight) 3.6-4g
Rosemary in moderation
2 tablespoons oil


[How to make]

1. Remove excess fat from under the skin of the chicken. An incision is made along the bone and then into the cartilage of the joint.


"If you save the white fat, it will eliminate the characteristic chicken odor. If you are concerned about the streaks, please remove them." (Mr. Shizuno)



"If you make a cut, it will definitely be easier to eat," says Shizuno.


2. Rub salt onto the chicken and let it sit for at least 30 minutes.
"1% salt gives a strong flavor. Adjust the amount according to your preference. If you leave it for about 30 minutes, the moisture will come out from the chicken and the meat will become firm." (Mr. Shizuno)


3. Prick the chicken skin in several places with a knife to prevent it from shrinking when grilling.
``This will help the salt soak in better.'' (Mr. Shizuno)
Wipe the chicken dry, rub in the crushed garlic, drizzle with oil, top with rosemary, and let it soak for a while. Preheat the oven to 190℃.



4. Cut the potatoes into 1.5cm cubes and the apples into 2cm cubes.



5. Line an oven plate with parchment paper and place the chicken, skin side up. Sprinkle the remaining oil on the chicken butts, place on the margin of the plate, and top with rosemary.



6. Roast in the oven at 190℃ for 15 minutes, then increase the temperature to 250℃ for another 15 minutes, for a total of 30 minutes.
