Did you all have a relaxing New Year's holiday?
In January, in addition to New Year's, there are many opportunities to eat Japanese food such as Nanakusa porridge and Kagami biraki.
As the cold days continue, the use of hot pots increases. For dessert on days when you've been eating Japanese food, you might want something a little more Western-style.
We asked chef Rinko Shizuno to share with us the perfect dish for such occasions.
``Tiramisu is an Italian dessert.Mascarpone, fresh cream, and eggs are commonly used, but I made it with cottage cheese so that it can be enjoyed refreshingly after Japanese food. Not only is it high in protein, but it also provides calcium. And it's low in fat. It's very healthy." (Mr. Shizuno)
Cottage cheese rich in calcium and vitamin D
Tiramisu is an Italian dessert characterized by sweet and mellow cheese, the bitterness of espresso, and cocoa powder.
In Japan, tiramisu suddenly became famous during the ``Ita Meal Boom'' in the 1990s, and ``tiramisu'' after a meal became a big hit.
At the time, it was considered a "fashionable dessert," but now it has become a popular dessert, along with shortcake and Mont Blanc.
“It may look difficult at first glance, but there is no baking involved, so it is easy to make. This time, I would like to start by making cottage cheese.” (Mr. Shizuno)
The ingredients for cottage cheese are milk and lemon. Milk is rich not only in protein, but also in calcium. Therefore, we would like you to take "Lypo-C C+D".
Vitamin C, when taken with protein, supports collagen production. On the other hand, vitamin D supports the function of calcium, and is a nutrient that is attracting attention for maintaining health.
Although you can feel the richness of cheese, it is refreshing and healthy.
``It may seem like a hassle to make it from cheese. However, once you try making it, you will realize that the nutrition of milk is concentrated and it is very healthy. There are only a few ingredients. So please try it once.'' (Mr. Shizuno)
[Materials] (For 4 pieces)
1 liter of milk
50cc of lemon juice (about 1 piece)
agave syrup (for espresso) 1 tablespoon
agave syrup (for cottage cheese) 2 tablespoons
espresso 40cc
Castella as appropriate
Cocoa as appropriate
[How to make]
1. Squeeze the lemon, mix it with the milk and warm it up for about 5 minutes.
"It will continue to separate, so please warm it while stirring. Turn off the heat just before it boils. It will continue to separate after that." (Mr. Shizuno)
"It's OK if it's separated to this extent."
2. Filter 1 and separate it into water and cheese. Squeeze the cheese part to make cottage cheese.
3. Prepare cottage cheese, agave syrup, castella, and espresso.
"In addition to castella, you can also use biscuits or anything that soaks up the espresso," says Shizuno.
4. Add 1 tablespoon of agave syrup to the espresso and mix. Add 2 tablespoons of agave syrup to the cottage cheese and blend until smooth.
5. All that's left to do is serve. Place the castella in a bowl, pour espresso over it, top with the cream from step 4, and sprinkle with cocoa powder, and it's done.
