Recipe aiming for synergistic effect with vitamin C and vitamin D

─ The teacher supervised six recipes. What are the points you paid attention to in the recipe?

TachibanaThis time, we have created a recipe based on ingredients that contain nutrients that are compatible with vitamin C and vitamin D, so that you can choose according to the season and the physical and mental condition of the person drinking it.

Vitamin C has a synergistic effect when taken together with vitamin E, so this time I used foods containing vitamin E, such as kiwi, peach, yuzu, and almond milk.

For vitamin D recipes, we use ingredients that contain magnesium, which is compatible with vitamin D, such as soybean flour, almond milk, and kumquats.

─What points should I be careful about when making a drink that combines with Lypo-Capsule series?

The Tachibana Lypo-Capsule series has a unique bitter taste, and the taste may stand out in hot drinks. I think it would be easier to drink if mixed with a cold drink.

The flavor that goes well with it is ``sour''.
If you don't like the taste, you can add sweetness to it to make it easier to drink. Amazake is also used in this recipe, but we recommend using a small amount of amazake as it adds sweetness.

Please note that due to the characteristics of Lypo-Capsule, drinks that exceed 80 degrees Celsius are prohibited.
If you are making a hot drink, please make it at a temperature below 60℃.

─ From the perspective of your specialty, "molecular nutrition," why is vitamin C and vitamin D necessary for the body?

TachibanaIn the first place, vitamin C cannot be produced within the body, so we have no choice but to ingest it from outside.
Especially in today's stressful society, the consumption of vitamin C in the body has increased, so it is an important nutrient.

However, since you have to consume a considerable amount through food alone, I think it is important to supplement with supplements.

Also for the sake of your mouth.
I used to be involved in the treatment of people with systemic diseases caused by diabetes, and I found that people with periodontal disease are more likely to develop diabetes, and conversely, people with diabetes are more likely to develop periodontal disease.
Your mouth is an area that you should pay close attention to, as it affects not only your appearance but also your overall health.

And about vitamin D.
Until now, vitamin D has been associated with something that supports the function of calcium, but it is now known that it is an essential ingredient for maintaining all kinds of health.

Vitamin D is produced in the body by exposure to sunlight, but because it's hot these days and people are less active outside, and many people apply sunscreen on a daily basis, about 90% of Japanese people don't have enough vitamin D. It is said to be D deficient.

I think it may be necessary to compensate for this with supplements.

─ Lypo-C is also available at the clinic. What is the appeal of Lypo-C from a teacher's perspective?

TachibanaFirst of all, it's the absorption rate.
I think it is very good in that you can take in vitamin C efficiently.

Also, the oil used in Lypo-C is amphiphilic, meaning it dissolves in both water and oil.

The liposomal supplements I was taking previously floated in water and did not dissolve. In that respect, I realized that the oil used in Lypo-C is completely different!
I think it is important to be sure of the manufacturer when choosing a product.

─ I heard that you yourself are a regular user of Lypo-C Vitamin C. When do you usually drink?

Tachibana: I usually drink it three times: when I wake up in the morning, before I eat lunch, and before I go to bed.

The reason why I divide it into three doses a day is because it is better for the concentration of vitamin C in the body to remain constant, so I believe that it is better to divide it into 1,000 mg in the morning, 1,000 mg in the afternoon, and 1,000 mg in the evening.

It is important to look at the “whole” rather than the symptoms.

─ Recipes are distinctive in that they are based on ``medicinal dishes'' such as seasonal ingredients and spices. What are the benefits of incorporating medicinal foods into your daily life?

The advantage of Tachibana Yakuzen is that you can choose the ingredients according to your current physical condition and symptoms.

Generally speaking, when it comes to meals, you choose something based on things like ``I want to eat this today'' or ``I'm in the mood.''

However, when you study medicinal foods, you start to choose based on your symptoms, like, ``I have swelling today...so let's choose this ingredient.''

You can also be more sensitive to your mental state, like saying, ``I'm feeling down, so let's cheer up!''
I think the good thing about medicinal cooking is that it allows you to look at your mind and body objectively.

─ As a dentist, how did you become interested in medicinal meals?

Tachibana: I originally worked in the field of oral surgery, where I was responsible for tumor surgery and wisdom tooth extraction.

During outpatient examinations, many patients come to us with a condition called ``glossodynia,'' where they feel pain in their tongue.

If the cause cannot be determined even after various tests, such as a lack of zinc or anemia, the diagnosis will be ``tongue pain of unknown cause.'' It is a very common disease, so much so that half of the patients we see each day are suffering from tongue pain.
However, because the cause is not known, the diagnosis is often that it's just stress.

One day, I started prescribing Chinese herbal medicine to a patient suffering from tongue pain, and his symptoms gradually improved.

I think I have an affinity with those people, but when I see many people getting well by taking Chinese herbal medicine, I feel that it is important to incorporate the perspective of not only Western medicine but also Eastern medicine.
After that, I became interested in Chinese medicine and started studying it.

As I continued to study, I realized that the most important thing was food. I think that's where I learned more about medicinal dishes.

Tachibana: What I learned from Chinese medicine is the idea of ``Let's look at the whole thing, not the symptoms.''
For example, instead of just looking at your eyes because your eyes hurt, try looking at where the pain in your eyes is coming from.

First of all, think about your own physical condition and choose ingredients and dishes based on that.
The fact that I came to this point is the good thing about incorporating medicinal foods into my life.

When your diet becomes richer, your mind becomes richer too.

─ Some people know that eating is important, but are too busy to put it into practice. What dietary advice would you give to such a person?

TachibanaWhen it comes to easy-to-follow dietary advice, which I also put into practice, it's as simple as ``cooking some rice.''

The key is to cook brown rice (white rice is also acceptable) with black rice, black beans, and pigeon barley.

Black foods such as black rice and black beans have the effect of ``nurturing the kidneys''.
The power of the kidneys, called kidney qi, is life force. It peaks at age 28 for women and age 32 for men, and then gradually declines from there, so it is important to compensate as you get older.

Brown rice is good for your health, but it takes time to digest, so avoid eating it when your digestive power is weak.
If you have trouble digesting it, it's a good idea to switch to brown rice every 5 minutes.

We also recommend shaved bonito flakes, which are packed with protein.
For example, one 50g egg contains about 6.2g of protein, while 50g of shaved bonito flakes contains about 40g of protein.

When we think of healthy meals, we tend to think of vegetables, but prepared foods and salads can also be purchased outside.
So, I cook the rice myself, sprinkle some bonito flakes on it, and make it into rice balls. I think it's easy to eat healthy with just that.

TachibanaI think that if you have a rich daily diet, not only will your body be healthy, but your mind will also be enriched.

What to cook and eat? That is important, but above all, being able to enjoy eating food enriches the soul.
I think that is very important.
